Place Vegetable Tray Insert in the STOK® Grill and preheat to medium heat, between 300°F - 350°F.

Meanwhile, in medium-sized bowl, coat the potato wedges with olive oil, garlic, salt and pepper.
Once grill is heated, add potatoes to vegetable tray and close the lid to the grill.
Cook potatoes for about 35 minutes. Toss after 10 and 20 minutes.
Once the potatoes are fully cooked, remove them from the vegetable tray and place in a serving dish.
Drizzle with the olive oil and herbs. Toss to coat.
Serve.
