Roasted Red Potatoes

Ingredients Used:

  • 6 red potatoes, washed and quartered
  • Olive oil
  • 1-2 cloves of garlic, finely chopped
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1½ - 2 tablespoons fresh thyme**
  • 1½ - 2 tablespoons fresh rosemary**
  • **Any combination of herbs can be used. Feel free to experiment.

Preparation

Step 1

Place Vegetable Tray Insert in the STOK® Grill and preheat to medium heat, between 300°F - 350°F.

Step 2

If using the STOK® Tower, click here for heating tips.

Step 3

Meanwhile, in medium-sized bowl, coat the potato wedges with olive oil, garlic, salt and pepper.

Step 4

Once grill is heated, add potatoes to vegetable tray and close the lid to the grill.

Step 5

Cook potatoes for about 35 minutes. Toss after 10 and 20 minutes.

Step 6

Once the potatoes are fully cooked, remove them from the vegetable tray and place in a serving dish.

Step 7

Drizzle with the olive oil and herbs. Toss to coat.

Step 8

Serve.
