Use a fork to poke holes in brats, and cover with stout. Allow them to soak in the fridge for several hours.
15 minutes before cooking, set grill to medium low heat.
Insert Wok, and pour beer and brats in. Allow them to simmer for 5 minutes.
Remove Wok, and insert grill grate. Turn heat to medium high and allow grate to heat up.
Place each brat on hot grill for about 3 minutes- turning at least once for even cooking.
When brats begin to split, remove from grill and immediately wrap each one in a slice of provolone cheese.
Put the brats in buns, and top with sauerkraut and mustard. Serve hot with your favorite cold beer.
