Pig's Pizza Pie

  • Sugar (1 teaspoon)
  • Smoked Paprika (1 teaspoon)
  • Salt (1/2 teaspoon)
  • Olive Oil (1 and 1/2 teaspoons)
  • Boneless Pork Loin (1/2 to 3/4 lb., 1/2 inch thick)
  • Corn Meal (2 teaspoons)
  • Dough (15 oz.)
  • BBQ Sauce (1/3 cup)
  • Mozzarella Cheese (1 cup)
  • Provolone Cheese (1/2 cup)
  • Pepperoni slices
  • Cooked Bacon bits (1/4 cup)
  • Cooked Sausage bits (1/4 cup)
  • Deli Honey Ham slices pulled into pieces (1/4 cup)
  • Diced Jalapeno Peppers (optional)

Preparation

Step 1

Prepare Pork Loin: Use 1/2 to 3/4 lb. of boneless pork loin cut at 1/2 inch thickness. Take pork loin out of package, pat dry with paper towels and then add olive oil to both sides of the pork loin. Mix 1 teaspoon of sugar, 1 teaspoon of paprika and 1/2 teaspoon of salt together. Rub mixture onto both sides of the pork loin and let set for 5 minutes. (By the way, this is a fantastic rub to use if you're just making grilled pork loins!)

Step 2

Cook Pork Loin: Turn grill on. Allow temperature to reach 300-350 degrees. Place pork loins on the grill and grill each side for 1 to 2 minutes or until center is 160 degrees. Turn grill off. (You want it to cool so you don't burn your hands putting the pizza insert in!) Remove pork from grill, lightly cover pork loins with aluminum and allow to rest for 5 minutes. Slice pork loin into 1/4 inch strips.

Step 3

Prepare Pizza Stone: Preheat pizza stone for 15 minutes. Grill temperature should be at 300-350 degrees. After 15 minutes turn grill temperature down to 200-250 degrees to cook pizza.

Step 4

Prepare Pizza: Follow directions on pizza dough package. Dust 1/2 to 1 teaspoon of cornmeal onto the pizza peel, then lay dough on top of the pizza peel and shape dough into pizza pie. Add 1/3 cup of BBQ sauce to pizza dough. Add 1 cup of mozzarella cheese. Add 1/4 cup of provolone cheese.

Step 5

Prepare Pizza con't: Add pepperoni slices, precooked bacon bits*, honey ham and fully cooked sausage bits.* *Bacon and Sausage can be cooked using the STOK wok or griddle. I like to use fresh ingredients when cooking, but this will add about 15 minutes of prep time.

Step 6

Prepare Pizza con't: Add 1/4 inch sliced pork loin. Add another 1/4 cup of provolone cheese. (I like to put part of the provolone cheese on top of the toppings to make it more pie-like, but you can put all the provolone cheese under the toppings with the mozzarella.) Optional: Add jalapenos for a spicy kick.

Cook Pizza: Dust 1/2 to 1 teaspoon of cornmeal onto the pizza stone. Transfer pizza from peel to pizza stone, close grill hood and cook for 15-20 minutes or until crust is golden brown. Remove pizza, let it cool and get ready to eat one mighty tasty pizza pie!
