Prep Time: 8-10 hours
Grilling Time: 4-6 hours

Preparation

Step 1

Place ribs on a tray or deep cookie sheet. Massage the pork rub evenly into the entire rack. Spread frozen concentrate apple juice over ribs. Cover with tinfoil place in fridge for 8-10 hours.

Step 2

After ribs are finished marinating, remove from fridge and discard aluminum foil. Preheat grill to 175 degrees Put the Stok rib insert into the grill. Place ribs into the insert, facing upright. Pour juices and left over marinade into a disposable tin container. Add 1 teaspoon of liquid smoke to juices and place on the side opposite of the ribs on the grill.

Step 3

It is important to maintain temperatures between 150-175 degrees to maintain tenderness. Grill 4-6 hours, checking periodically for doneness. If temperature climbs too high reduce heat directly under the ribs. Check ribs every 45-60 mins and baste ribs with the liquid smoke marinade to keep them moist.

Step 4

These ribs are so delicious and tender and are wonderful by themselves, or you can serve them with a sauce of choice.
