Preheat one side of the STŌK Grill to high heat, 400°F. Leave the burners on the other side of the grill in the off position.
In a small bowl, stir together Dijon, honey, Cajun seasoning, thyme, rosemary, garlic, salt, pepper and one tablespoon of the olive oil.
Butterfly the pork roast. To do this, cut a 1 ½ - 2 inch deep slice along the length of the roast. As you cut, pull the top layer of the meat away from the bottom.
Spread the mustard mixture evenly over the cut surface of the pork roast. Roll up the roast and tie at 1-2 inch intervals with kitchen twine. Rub the outside of the roast with one tablespoon of the oil and season with salt and pepper.
Once grill is preheated, place the roast on the grill over direct heat and sear until grill-marked on all sides, 7 to 8 minutes total. Transfer the roast, tied side down, to the side over indirect heat. Cover the grill and cook for 30 minutes, maintaining the internal temperature of the grill between 400° to 450°F. After 30 minutes has passed, turn the roast over and grill for another 30 minutes or until the internal temperature of the roast is 160°F.
Transfer the pork to a cutting board, cover loosely with aluminum foil and let rest for 10 minutes.
Cut the pork into slices and serve.
