Preheat grill to about 400. While grill is heating up, rinse and pat dry chicken. Rub with olive oil, fresh cracked pepper and salt.
Grill chicken until internal temp reaches 165.
Shift to low heat setting (about 200-250) and insert stone.
Shape dough into small circles about 4" in diameter. TIP: Use pre-made dough if you can. It's easy to simply cut the dough into circles.
Cut 6 squares of foil and dust very liberally with corn meal. Lay dough on squares, and spread with BBQ sauce.
Top with diced chicken and cheese.
Arrange pizzas on stone. You should be able to fit 6 on the stone at a time. Close lid and bake for 16-18 minutes.
