Place the Vegetable Tray Insert on the Stok Grill. Preheat to medium heat, between 300°F - 350°F.

Remove and discard pulp from inside of the tomatoes.
Season all sides of the tomatoes with salt and pepper and brush the cut side of the tomatoes with olive oil.
Place the tomatoes cut side down on the bottom of the tray. Cover the grill and let cook for about 4 minutes (check after 2 minutes.) Use a metal spatula to lift tomatoes off of the grill for serving. Place tomatoes cut side up on serving dish.
Drizzle a little more olive oil on the tomatoes. Season with salt and pepper and garnish with basil.
Serves 4-8 as a side.
To make a Caprese Salad: Dice Grilled Tomatoes and toss with diced or cubed fresh mozzarella cheese. Add a drizzle each of balsamic vinegar and olive oil. Sprinkle fresh ground pepper and finely chopped basil to garnish.
