Remove one grate insert (you will insert the Rib Rack later) and preheat the STŌK Grill to low heat, between 200°F-250°F. Only use the two burners that are NOT directly under the empty slot to preheat the grill. This will enable the ribs to cook in indirect heat.

Place ribs in a large dish. In a small dish, combine the dry rub ingredients. Spread dry rub all over both sides of the rack of ribs. Rub the seasonings into the meat. Transfer the ribs to the Rib Rack. Use the STŌK Insert Removal Tool and heat resistant oven mitts to transfer the Rib Rack to the empty insert slot. Close the grill lid.
Allow ribs to cook for 1½ - 2 hours. The meat is cooked when a toothpick goes through it very easily. Refrain from opening the grill lid as this allows heat to escape.
Fifteen to twenty minutes before removing ribs from the grill, baste with ½ -1 cup of the barbecue sauce.
Once cooked thoroughly, remove the ribs from the grill and serve with remaining barbecue sauce.
Preparation for Barbecue Sauce:
In heavy-bottomed sauce pan, stir together all but the soy sauce, butter and liquid smoke.
Bring to boil and let simmer for 30 minutes, stirring frequently to prevent scorching.
After 30 minutes, add final ingredients. Let simmer for 10 minutes longer.
Remove from heat and let cool.
Serve or transfer to storage container and place in refrigerator.
