Gather the ingredients needed for the recipe. *Freeze your bacon slices prior to making this recipe. (This will allow for it to be easier to chop)
Wash the potatoes & dice into square pieces.
Place the already cut potatoes in a bowl filled with water.
Dice red pepper, green pepper, and onion into small square pieces.
Make sure grill is set to medium heat. Place kettle or cast iron skillet (depending on serving size) on grill and add potatoes.
Cook potatoes for about 10 minutes. Stirring often, until brown and season with salt and pepper.
Add the diced red peppers, green peppers, and onion to the cooked potatoes.
Chop up the bacon, and then add to the potatoes mixture.
The bacon will start to render, and the fat will begin to further cook the potatoes. Toss it up a bit!
Once the bacon is cooked, add the Old Bay Seasoning and stir.
Add dried or fresh parsley.
Just before serving, drizzle over the maple syrup and toss. Let this cook for another minute to caramelize the mixture.
*Additional Notes*: -Go great with a sunny side egg on top -This serving size is appropriate for a small household. If you're serving more than 4, bump up the amount of potatoes!
