Gather all of your ingredients. Rub olive oil over your potatoes and par-bake them at 400 degrees for 20 minutes.
Cut the ends off of the potatoes so that they will stand up. With a spoon gently scoop out the insides of the potatoes. Save the insides for later use if desired.
In a small mixing bowl add the chopped ham.
Add in your cheddar cheese.
Pour in your bbq sauce.
With a spoon or a fork mix everything together.
Stuff your potatoes with the ham and cheese mixture.
Wrap your potatoes with two slices of bacon each, secure the bacon with toothpicks.
Heat your grill to high and place your griddle insert on the grill. Place the potatoes directly on the Griddle insert.
Top the potatoes off with a little bit of cheddar cheese.
Close the lid and let cook for 15 minutes.
Check after 15 minutes to make sure the bacon isn't burning on the bottom.
When bacon is finished, remove form the heat.
Pull the toothpicks out of the potatoes.
Place a dollop of sour cream on top.
Sprinkle green onions on top, serve and enjoy!
