Dice onion and pepper, and cover with bourbon. Allow to soak while rest of prep continues.

Preheat Wok for about 10 minutes, then brown beef in it. Set aside.
Step 4
Cook bacon in Wok until it reaches the desired level of crispiness. Cut bacon into small pieces and set aside.
Step 5
Pour veggie/Bourbon mix into Wok and stir fry until tender. Set aside, and remove Wok.
Step 6
Adjust heat to low setting and insert Kettle. Add Beef to the Wok, and stir in spices thoroughly.
Step 7
Add chili beans and stir, then add the crushed tomatoes and tomato sauce. Add veggies and bacon (or use bacon later as toppings). Allow chili to simmer on low for about 30 minutes to an hour, stirring frequently.
Step 8
Serve warm. It's great with shredded cheese and sour cream. A slice or two of cornbread really hits the spot too!
